Apple BBQ Pork Tenderloin

I found this recipe on Pinterest and decided to try it.  I haven't had much luck in the past with Pinterest crock pot dinners but this one was very good!  I had 2 frozen pork tenderloins and threw them in the crockpot with the other ingredients.  I added Vidalia onion and used cinnamon apple sauce (not chunky) and cut up one red delicious apple in the crock pot.  The house smelled amazing as it cooked (thankfully we weren't home the entire time or I would have been starving all day!).  Since the pork was frozen, I cooked it on high for the first 2.5 hours then on low for an additional 4.5 hours.  I served it with mashed potatoes and some broccoli.

Here's the pork in the crockpot

Here's our  meal

Ingredients:
1 - 2lb pork tenderloin
1 cup applesauce
1 cup BBQ Sauce
2 tbsp minced dried onion (I used a small Vidalia onion cut into rings)
1 small apple cut into slices

Directions:
Place pork in the crock pot
In a medium bowl, mix applesauce and BBQ sauce together (and minced onion if you're using it)
If you're using the cut up onion, just put the rings over the pork
Spread applesauce mixture over the top of the pork
Sprinkle the apple slices throughout the crock pot
Cook on low for 6-8 hours or high for 3-4 hours

Enjoy!

Pork Tenderloin with an Orange Glaze

I took advantage of the short flight home from our Thanksgiving holiday to glance through the latest Cooking Light magazine.  I found 2 meals that I wanted to try and made one of them last night.  It was very flavorful but took longer than the recipe called for in cooking time to reach the internal temperature.  I was so tired from the travel that I forgot to buy honey (which the recipe called for) but I think it turned out well regardless.  It's a light and tasty dinner!

The cook times below are from the original recipe.  I ended up increasing the temperature to 375 degrees and cooking for an additional 10 minutes.

The pork when it came out of the oven

Our meal

Ingredients:
1/3 c orange marmalade
3 tbsp cider vinegar
3 tbsp low sodium soy sauce
1-1/2 tbsp minced garlic
1-1/2 tsp honey
2 tbsp canola oil (I used olive oil)
1 (1 lb) pork tenderloin
1/4 tsp kosher salt
1/2 tsp fresh ground pepper

Directions:
Combine first 5 ingredients and whisk together.  Reserve 2 tbsp of mixture
Preheat oven to 350 degrees
Heat oven proof skillet over medium high heat.  Add oil; swirl to coat
Salt & Pepper each side of the tenderloin and place in pan
Cook 5 minutes, until browned.  Turn pork over and brush 1/4 cup of orange sauce on top
Place in oven and cook for 10 minutes.
Turn pork over and brush with 1/4 cup of orange sauce & cook another 10 minutes - or until internal temperature reaches 150 degrees
Remove from oven and place pork on cutting board to rest.  Brush with reserved 2 tbsp orange sauce.
After the pork rests about 10 minutes, cut and serve.

Enjoy!

Pork Tenderloin with Dijon Mustard

I enjoy pork tenderloin but usually make it when M is out of town since it's not his favorite meal.  I found a recipe that called for butterflying the pork to speed up the cooking time.  This is an easy meal on a weeknight  and it was pretty flavorful too!  I also love that it has just a couple of ingredients.  I served the pork with baked fries and green beans.  Yummy!

Ingredients:
1 lb pork tenderloin
2 tbsp Dijon mustard (I just eyeballed it)
Salt & Pepper

Directions:
Preheat grill to medium heat
Using a pairing knife, carefully slice the pork lengthwise to butterfly it (do not cut all the way through)
Open the pork and lay it flat
Spread the Dijon mustard, Salt & Pepper on each side
Grill for 5-6 minutes per side
Remove from grill and tent with foil for about 5 minutes then slice & serve
