This has become a new favorite in our house - even M goes back for 2nd and 3rds! I think it's better than the traditional meatloaf and has really good flavors! This goes well with some mashed cauliflower (or potatoes) and broccoli!
Ingredients:
2 cloves garlic, minced
1/2 onion, chopped
1 tbsp olive oil
1-1/2 tsp Italian seasoning
1 tsp ketchup
1/2 tsp table salt
1/2 tsp black pepper
1 large egg, lightly beaten
1-1/4 lb lean ground turkey
1/4 c low fat shredded cheddar cheese
1/4 c seasoned whole wheat bread crumbs (I eye ball these so, you may need a little more depending on the texture)
Topping:
1/2 c ketchup
1 tbsp light brown sugar
1 tsp mustard
Directions:
Preheat oven to 350 degrees
Heat oil in pan and add onions. Saute onions for about 3-5 minutes. Add garlic and stir - making sure to not burn the garlic. Set aside and cool a bit
In a large bowl, combine turkey, onion mix, Italian seasoning, 1 tsp ketchup, salt, pepper, egg, cheese & bread crumbs. Mix well.
Lightly spray loaf pan with cooking spray and pack turkey mixture in pan
Bake for 25 minutes
Meanwhile, combine topping mix. After 25 minutes of baking, spread topping on meatloaf and bake for another 15 minutes.
Remove from oven and allow to cool about 5 minutes before cutting.

Meatloaf "Muffins"
I have been wanting to make meatloaf in a muffin tin for a while. Since it's so cold out, that seemed like a fun dinner for last night. I used my usual meatloaf recipe and added French's French Fried Onions (crushed up) to it. I'm not sure if I just cooked it a little too long or if I need the fattier beef, but this turned out a little dry for me. The spice was really good and I'll make it again but play with ingredients / cook time.
Ready to put in the oven

Meatloaf Muffins

1 lb ground beef (I used the 96% lean)
1 egg, beaten
A few dashes of Worcestershire Sauce
1-2 tbsp dijon mustard
A few dashes of onion powder

Grilled Meatloaf
As is the case in many parts of the country, it was insanely hot here this week. I wanted to grill something for dinner so I wouldn't have to turn on the stove! I looked at several recipes for grilled meatloaf to determine the best method. I ended up buying aluminum (throw away) loaf pans and that worked out great! Other methods called for shaping the meat into a loaf and grilling on planks. I wasn't sure I'd like the "smokey" flavor of meatloaf on a cedar plank. Anyway, it was very easy and a bit faster than cooking in the oven. I forgot to add the ketchup topping but will try that next time about 10 minutes before it's done. I served mine with grilled yukon potatoes (recipe is already on the blog) and steamed broccoli. Delish!

Ingredients:
1 lb ground beef
1.5 tbsp dijon mustard

8-10 saltine crackers, crushed up

1.5 tbsp dijon mustard
1 egg

Ground Beef & Sausage Meatloaf Topped with a Cajun Mayo Spread
I'm proud to say I made "regular 'ole meatloaf" into something pretty delicious! I pulled out ground beef from the freezer before work and was trying to decide what to do with it. I went to my favorite site (foodgawker) and began perusing. I tripped on a few different recipes there; checked out allrecipes too and came up with this recipe after reading several variations of "meat loaf". The end result was really amazing! It's probably the best meat loaf I've ever tasted!!
The cajun mayo spread was something I saw on foodgawker but the recipe called for lemon juice. I didn't have any of that so I was looking around the kitchen for what to sub in there. I came up with some Dijon mustard. I think that made it perfect! (I'm not sure I'd try lemon juice!)
I served the meat loaf with a salad made from our own romaine lettuce in our garden and some mashed potatoes.
Here's a picture of our romaine lettuce:
Ground Beef & Sausage Meatloaf Topped with a Cajun Mayo Spread
Ingredients:
1lb ground beef
1/2 link of Mild Italian Sausage, casings removed and cut into smaller chunks
1 egg
1/4 cup milk
1/3 cup saltine crackers, crushed
Onion Powder - a few dashes
Salt / Pepper to taste
Worcestershire Sauce - a few dashes
About 1/4 cup Fresh Parmesan Cheese
1/4 cup ketchup
2 tbsp brown sugar
For the Cajun Mayo Spread (I only made it for me so these measurements are for 1 serving):
Cajun Seasoning, a few dashes
3 tbsp mayo
1 tbsp dijon mustard
Worcestershire Sauce, 2-3 dashes
Directions:
Preheat oven to 350 degrees
Combine first 9 ingredients in a large bowl and mix well
Place meat mixture into loaf pan (coat with Pam spray first)
Mix ketchup & brown sugar together in a smaller bowl
Top meat mixture with ketchup mixture
Place in oven and bake for 40-45 minutes
Remove from oven and let it rest for about 5 minutes before cutting into it
While meat loaf is cooking, combine ingredients for the mayo spread and set aside
Top finished meat loaf slices (on plates) with mayo spread & serve

Run of the Mill Meatloaf
We made meatloaf last night. It was super easy and very tasty. The only variance to the recipe that I found here was that we sauteed the onions before putting them in the meat. I don't like onions in the meatloaf but I love the taste of them so this was a great way to get them in there!
Here's a pic right after we took it out of the oven:

Here's my dinner:
Serves: 8
- 1 1/2 pounds ground beef
- 1 egg
- 1 onion, chopped (you may saute in some butter before mixing)
- 1 cup milk
- 1 cup dried bread crumbs
- salt and pepper to taste
- 2 tablespoons brown sugar
- 2 tablespoons prepared mustard
- 1/3 cup ketchup
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs (we used Italian Seasoned Bread Crumbs). Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf. (I advice to triple the topping as suggested by others).
- Bake at 350 degrees F (175 degrees C) for 1 hour.
